 Spinach Pancakes

Spinach Pancakes
1cup milk 1/2pt/280ml
1tsp salt
1/8tsp grated nutmeg
1cup flour 4oz/100g
2tbsp of melted butter
2 eggs
1tsp sugar
1/2lb fresh spinach, blanched and chopped 225g
or 1 package frozen chopped spinach, thawed
butterSeason themilk with the salt and nutmeg. Sift in the flour, a little at a time, beating constantly. Stir in the melted butter. Let mixture stand for 30 minutes to 1 hour. Beat the eggs with the sugar and stir into the batter. Add the spinach. Prepare the pancakes as usual. Cook the pancakes in a buttered pan.
In Finland, these pancakes are served with lingonberries.
