125g butter 350g caster sugar 2 medium eggs, beaten 250g plain flour 1 tsp bicarbonate of soda 1 tbsp ground cinnamon 1½ tsp ground nutmeg 1 tsp salt 750g apples 125g chopped mixed nuts
Pre heat the oven to gas mark 4. Cream together the butter and sugar, then gradually beat in the eggs. Sift the flour, soda, spices and salt together and fold into the creamed mixture. Peel and finely chop the apples and fold into the mix with the nuts.
Put the mix into a greased 23 x 33 cm tin. Bake in the oven for 1¼ hours, then lower the temperature to Gas Mark 2, and cook for a further 45 minutes. Remove from the oven and leave to cool in the tin. When cool, cut into squares and serve.
