IT all depends on how the vampirism works. If it is similar to an STD(like how JK compared lycanthrope to HIV) then it is safe to assume that vampirism works on the same basis. Going with my HIV/AIDS theory, one could think that instead of destroying T-cells, it creates the vampire cells(here on out called V-cells). V-cells would be highly aggresive, and feed off of the human blood components, mainly hemoglobin.
Hemoglobin is a chemical that lets blood carry oxygen and many other things. It is also why vampires need to feed off of human blood. Carries a fresh supply of hemoglobin.
The venom that is passed to spread vampirism, when introduced to humans, creates a unique mutation that causes the disease to create unique strands of V-cells inside of their human host(the fledgling vampire) Since they are unique to each individual, and also highly aggressive to turn the entire host, they will attack other unique sets of V-cells. This is why vampires can not breed with each other. But when a vampire breeds with humans, the embryo/sperm, can adapt at such an early stage of development, and create a new organ that produces extra amounts of hemoglobin, mostly dissipating the need to feed.
